When teeth are removed, the bone will tend to shrink, left to itself. And depending on if there's a desire to restore an area later in the future, material can be placed in the area where the tooth came out, and that will serve as a scaffolding for bone to grow so that the bone doesn't shrink on both sides, as well as up and down. It will maintain its original position, compared to where it would've been had you not done anything with it.
